Lovely Radish & Chive Butter

Loving Words On Radishes…

A few years ago I started to plant radishes because they grow quickly, can be planted as soon as spring allows, and the kids love pulling anything from the ground! 

I plant a lovely variety (from Johnnys of course) called Easter Egg. They are big, and purple, and pink, and white...so pretty. I usually toss them in with salads and give as many away as I can, because really, what else can you do with radishes?  Lo and behold, there are wonderful things to do with this pretty, yet pungent little garden friend!  

My new obsession is Casco Bay Butter...ooooh man, they are a Maine MOFGA-certified organic butter.  It's the real deal and crazy good!  Recently I was putting a giant bag of radishes in the fridge when a container of this awesome butter looked me in the eye and gave me an idea...

Radish & Chive Butter Recipe

Ingredients

  • 1/4 lb unsalted butter (1 stick)

  • 3 medium sized radishes (or to taste); shredded

  • 1/4 tsp Kosher salt

  • 1 tsp chives (or to taste) 

Method

Butter should be at room temp. Shred radishes and squeeze excess juice from them. 

With fork, work the radish into the butter, add salt and chives and mix to combine.

Store refrigerated or in freezer.  

I serve this butter on a lovely toasted baguette as is. It's so unique and earthy it really stands up on its own. But I also added this butter on top of some steak tips right off the grill and people loved it! No one could identify what the yummy interesting seasoning was and when I showed my container of radish butter everyone dove in for more.
